Zucchini Bread Recipe (June)

Ingredients
One cup of grated zucchini (skin on/well drained)
One cup sugar
One cup oil
Two slightly beaten eggs
One teaspoon vanilla
One and one half cup flour
One half teaspoon salt
One half teaspoon baking soda
One fourth teaspoon cinnamon
Optional add-ons -- a few drops of lemon juice, nuts, raisins.

Procedure
Preheat the oven to 350 degrees (Fahrenheit)
Mix the following ingredients into a bowl:
          One cup of grated zucchini (skin on/well drained)
          One cup sugar
          One cup oil
          Two slightly beaten eggs
          One teaspoon vanilla
Then sift the following ingredients into the same bowl:
          One and one half cup flour
          One half teaspoon salt
          One half teaspoon baking soda
          One fourth teaspoon cinnamon
Bake for one hour in a lightly greased floured loaf pan. 
As the hour the bread has been in the oven approaches check the bread by poking it with a tooth pick, it should come out clean.  
Cool in loaf pan for ten minutes then take out and cool on a wire rack.

Information About This Blog (4/28/11)

This blog is for customers of Costy Gardens, costygardens.webs.com, and anyone who would like to try some amazing recipes that contain vegetables.  Throughout the summer I will be posting blog posts any where from 3 to 5 posts a week; all of the posts will contain delicious recipes that I have discovered over the years I had a vegetable garden.  Any of the recipes might contain: zucchini, cucumbers, yellow squash, tomatoes,  green beans, eggplant, or any kind of leafy green.  I hope you find my blog interesting and sign up to follow it.
